Description: Artisanal fermented beverages have increased the awareness of the consumers due to their functional benefits since the outbreak of the pandemic. Water kefir is one of these beverages and has become popular due to its health benefits like anti-oxidant, anti-carcinogenic, anti- inflammatory, and healing properties. Water kefir is produced by fermenting sugar solution to which fruits are added, with water kefir grains. This project aims to train the students about the science of fermentation and the important quality parameters in fermented beverages with the water kefir example. The students are expected to work for 2 weeks in the Center of Excellence area in the School of Applied Sciences.
